Cookie Dough Protein Cups (GF/DF/V)


Now I don't know about you but my favourite flavour in the entire world is 100% cookie dough. If I see something cookie dough based treat (that I can eat of course, dairy free life ugh) when I'm out, I'll most likely buy it. I can't help it.


And yes, they are gluten-free, dairy-free and vegan. I know, you'll thank me later.


There's only 6 ingredients in this recipe! Super simple. Credit goes to Nadia's Healthy Kitchen, this is her recipe which I've just tweaked a lil bit.


You will need: 

  • 1/4 cup almond meal 
  • 1/4 cup vanilla protein powder (I use White Wolf Nutrition's creamy vanilla protein)
  • 5 tbsp almond butter
  • 4 tbsp coconut oil, melted
  • 1/4 cup dairy free chocolate buttons or chips (I use the Sweet WIlliam choc buttons, they're so yum)
  • 250g dark chocolate - any type is fine however if you want the "healthiest/best" option, opt for one that has a high cocoa content (between 80-90%) 


Method: 

  1. Put the almond meal and protein powder in a large bowl and mix together lightly.
  2. Add almond butter and coconut oil, and mix to combine.
  3. Fold in chocolate buttons.
  4. Break up the dark chocolate and put in a heatproof bowl. You can either melt the chocolate by popping it into the microwave and taking it out and stirring every few seconds (we don't want it to burn!) OR place the bowl over a saucepan of simmering hot water - bring water to boil and then reduce heat to simmer (make sure base of bowl isn't touching the water). Stir chocolate until completely melted and remove from heat when done.
  5. Add a couple of teaspoons of the chocolate into the base of a silicon cupcake mould (or use cupcake cases if you don't have a silicon mould). Place in freezer for 10 mins.
  6. Place cookie dough mixture evenly between cups, making sure you leave room on top for the extra chocolate. 
  7. Top with the extra melted chocolate and place in the fridge to set for roughly an hour.
