For all you salted caramel lovers out there, this is the perfect snack for you. I'd make a bunch of these when uni was getting tough and I don't know if they helped with the stress, but they certainly helped me with the sugar cravings.
You will need:
- 1/2 cup almond meal
- 1 tsp cinnamon
- 1 serve salted caramel protein (I use the White Wolf Nutrition or bRaw brand)
- Pinch of salt (optional)
- 3 tbsp almond butter
- 1 tsp coconut oil
- 1/2 cup maple syrup
- 2 handfuls macadamias
Method:
- Sieve almond meal, cinnamon and protein powder into a large bowl and mix lightly. Add a pinch of salt (optional) if you want that extra saltiness.
- Add the remainder of ingredients besides the macadamias, and stir until all ingredients are thoroughly mixed through. (If you find that the mixture is too dry, add a splash of water. Too wet? Add more almond meal.)
- Scoop out mixture into tablespoon sized balls, and place a macadamia nut in the centre before rolling into ball shape.
- Crush remaining macadamias with a knife and dice well, and use this to decorate the balls.
- Pop them into the freezer for at least an hour (or overnight if that's easier)
And that's it! Easy as.
